[RECIPE] Dark Chocolate Zucchini Brownies


The best damn dark chocolate zucchini brownies you could ask for!


We've tried this recipe twice and it's safe to say that it's here to stay! 🤤


What you'll need:

• ½ cup almond or peanut butter (we've tried both options and both are 👌)

• 1 ripe banana

• 1 egg

• ¼ cup maple syrup or honey

• ¼ cup unsweetened cocoa or cacao powder

• 1 teaspoon vanilla extract

• ½ teaspoon baking soda

• 1 medium zucchini, shredded and squeezed of excess liquid**

• ¼ cup dark chocolate chips


What you need to do:

▪︎ Preheat your oven to 180°C / 350°F

▪︎ Line an 8x8 baking pan with parchment paper and set aside

▪︎ Add all the ingredients except for the zucchini and chocolate chips to a high-speed blender/food processor and mix until well combined

▪︎ Move batter to a medium bowl and stir in the zucchini and chocolate chips

▪︎ Pour the batter into your prepared baking pan

▪︎ Bake for 35min

▪︎ An added extra to coat/drizzle melted dark chocolate and almonds over

▪︎ Allow to cool for 15min


The texture and consistency of this sneaky treat is more on the cake-like side than that of a fudge-ey brownie.
